I made 2 things from this cookbook The 1st was a Lime Coconut icebox pie and I was pretty pleased with how it turned out The 2nd was the Lemon Icebox Pie and it was a disappointment I followed the instructions to the letter and yet the pie never did set up in the fridge When I went to serve it, it was a slumping mess of lemon flavored whipped cream It was tasty, for whipped cream, but it was not my idea of a pie.

Pies usually involve lots of work The author has put together a collection of interesting recipes for a variety of refrigerator pies that do not require baking which cuts down on production time There are some standard classics in the collection as well as some lesser known varities.
